Cheesy Chicken Pie

It’s rare for us to all sit down and eat together as a family. Work patterns tend to get in the way. What is even rarer though, is for the children to enjoy the same dinner as us, so when Jack told me this dinner was “delicious”, I thought it worthy of sharing with you!

Diced chicken breast
1/2 onion diced
6 slices salami
1 pack ready rolled puff pastry
1 tsp dried rosemary
Salt and pepper for seasoning

Cheese sauce
1dessertspoon butter
1 dessertspoon flour
1/2 pint milk
150g grated cheese

Prepare cheese sauce.
Melt the butter in a pan.
Mix in the flour to make a roux.
Slowly stir in the milk until thoroughly mixed whilst heating gently.
Stir in the cheese.
Remove from heat.

Brown the onion and chicken in a frying pan.

Lay the pastry in a deep oven proof dish.
Place a layer of salami over the pastry.
Tip the chicken into the pastry.
Sprinkle the rosemary on top.
Pour on the cheese sauce.
Fold the pastry over and seal on all sides.

Bake for around 35 minutes at 180°c.
