Smoked Salmon Fishcakes

I am on a bit of a healthy eating drive at the moment, and decided that these yummy fishcakes might be just the thing for everyone to enjoy.

100g smoked salmon
100g mashed potato
2 tsp horseradish
1 tsp parsley
Salt and pepper to flavour

Beaten egg

How to
Prepare your mash potato.
Chop/tear up the smoked salmon into small pieces.
Mix the salmon, potato, horseradish and parsley.
Form into fishcake pattys.
Leave to chill in the fridge for 30 minutes.

Dip each of the smoked salmon fishcakes into the flour.
Coat with the beaten egg.
Cover with breadcrumbs.
Fry for 2-3 minutes each side.

Great served with a fresh salad or roasted vegetables.
Yummy and only about 500 calories 🙂
