Chocolate Fudge Cupcakes

You know that feeling when you see a scrummy-looking chocolate cake and all of a sudden you want some?
We had to make these super moist chocolate fudge cupcakes and we iced them to represent sunflowers.
We found the chocolate fudge cake recipe here on the BBC GoodFood website – aptly named naughty chocolate fudge cake – as it really is!
Half the amount was plenty to make 12 cupcakes.

We used our mixer for these cakes.
So all we had to do was measure out all the ingredients, pop them into the mixer and turn on to a medium speed for around 5 minutes.
We gave it a good stir and turned on the mixer again for another couple of minutes.
A final stir from us and we were ready to fill our cake cases.
We divided the mixture up equally between all of the cases – I think there was around 3 teaspoons in each one.
Then we popped them into a preheated oven at 180C for around 20 minutes.

Buttercream Icing
80g butter
180g icing sugar
a couple of drops of yellow food colouring
a dessertspoon of milk

We used some bright yellow food colouring to make our buttercream icing a lovely orangey-yellow colour and once the cakes were cooled, we spread this on.
Finally we added chocolate chunks to the centre of each cake and there you go some really delicious, bright sunflower cupcakes!

The cakes turned out really well, it was a lovely moist, rich cake.
Needless to say they didn’t last long in our house!
