Gingerbread Cupcake Mix – by the Cooperative

We made some of the Co-ops gingerbread cupcakes this week!
And they are delicious – if a little bit spicy for the kids, and they are not keen on the cinnamon dusting on the top!

They are really easy to make.

1. place cake mix into a bowl, and 2 tbsp oil, 4 tbsp water and 1 egg
2. mix thoroughly
3. spoon mix into cupcake cases
4. bake in the oven for about 15-20 minutes

The icing is plain buttercream and then there is a pack of cinnamon to sprinkle on the top.
The pack also contains a cardboard stencil to get the gingerbread man shape onto the top.
You can also use it both ways – so to leave a white gingerbread shaped patch or a cinnamon gingerbread shape.

They are yummy and taste just like gingerbread – to be fair the stencil wasn’t brilliant, but that was quite possibly the bakers fault!! 🙂
