I don’t always have the time to do the cooking at home, but occasionally we have a day where I manage to get home early from work and get into a cooking frenzy! This week, having felt rough for a fair few days I came home early and suddenly had the urge to get in the kitchen. I got the dinner sorted – well sort of, we already had the pulled pork so I made a potato and spring onion salad, and a bowl of mixed salad to go with it – and then the desire to bake cakes hit me. I try to vary what we are baking and this time Jack asked for coffee cakes. So here is the recipe we used to whip us up these quick coffee fairy cakes.
1 teaspoon coffee mixed with a dash of boiling water.
150g icing sugar
3-4 teaspoons water
To make the icing, sift the icing sugar into a bowl and add the water teaspoon at a time and stir in until you have a nice white, runny mixture.
Drizzle the icing onto each cake and add on any sprinkles you choose.
- 150g sugar
- 150g butter
- 1 egg
- 150g flour
- 1 teaspoon coffee mixed with a dash of boiling water.
- 150g icing sugar
- 3-4 teaspoons water
- Beat the sugar and butter together.
- Add in the egg and fold in the flour.
- Finally mix in the coffee.
- Bake in the oven at around 180C for 15-20 minutes.
- Turn out onto a wire rack to cool down.
