Sicilian Lemon Cake

Citrus flavoured cakes are a big hit in our household. Everyone loves a good lemon drizzle or a lovely moist Sicilian orange cake!
So we combined the two, making a Sicilian Lemon Cake – using this great Sicilian Orange Cake recipe. by the Kitchen Guardian.

Ingredients
125g butter
125g sugar
2 eggs
125g flour
50ml fresh lemon juice
1 tsp lemon zest

Icing:
100g icing sugar
5 tsp lemon juice (add more if necessary to get the right almost runny consistency)

How to:
Cream the butter and sugar together.
Add in the eggs and fold in the flour.
Mix in the lemon juice and lemon zest.
Pour mixture into your baking tin – we used a loaf tin for half the mix and made fairy cakes with the other half, (to which I also added a spoonful of dessicated coconut to make lemon and coconut cakes).

Bake in a preheated oven at 170°c for 30 – 40 minutes.
Sieve the icing sugar and mix in the lemon juice.
Drizzle the icing mix over the cake so it is dripping down the sides.

Now it is all ready to eat.
Moist and zesty – a yummy cake!
